What happens if you take a piece of metal and totally clad it in an an alloy? It is "encapsulated". Because of the special encapsulated bottom, these pans have great, with even heat transfer and because of that one can cook at lower temperatures.
Take a look at some of the best $300 copper pans...one is not supposed to pre-heat them 'dry' either. I think the previous individual just overcooked them without following the instructions.
Next time, buy a couple of single pans, from a place with liberal return policies, and compare them.
In the meantime, I will happily use these Revere pans for the next ten years of so.
